Seoul Baekyah is the mother liquor of Montage Jo's representative product, Seoul Nocturne. It is made with only Gimpo golden rice, water, and yeast, with no artificial or natural sweeteners, and the yeast is made from home-grown centella asiatica and pure Korean wheat, 'tiger yeast', which is made from home-grown psyllium and pure Korean wheat.
Samyangju is brewed three times, and finished after 120 days of natural fermentation. It is said to be characterized by its light sweetness and savory grain flavor, and if Seoul Nocturne, which is lowered in alcohol by adding water, is light and relaxing, the 15% Seoul Baekya is said to have a deep and calm taste like a pure white dawn. |
